What Happens to Food When Reheated?
Beyond the safety risks, reheating food can also change its quality. Each time you heat food, its texture, taste, and nutritional value can degrade. Water-soluble vitamins, such as Vitamin C and B vitamins, are particularly sensitive to heat and can be lost in the process. Proteins can also be altered, sometimes making the food tougher or drier.
