What is Northern Kanji?
Kanji is a fermented drink, traditionally popular in North Indian states like Punjab and Uttar Pradesh, especially during the winter and the festival of Holi. Its most well-known version is made from black carrots (kali gajar), which give the drink its
iconic deep purple colour. The recipe is simple: carrots are chopped and placed in a large glass or clay jar with water, salt, and coarsely ground mustard seeds (rai). This mixture is then left in the sun for several days to ferment, a process that creates its signature tangy, pungent, and slightly earthy flavour. While black carrots are traditional, beetroot or red carrots are also commonly used, resulting in a drink that is both delicious and culturally significant.
The Science of Natural Fermentation
The magic of Kanji lies in its natural fermentation process. Unlike commercially produced drinks that might have probiotics added to them, Kanji creates its own. The process relies on wild, naturally occurring lactic acid bacteria (LAB) present on the surface of the carrots and in the environment. The ground mustard seeds don't just add flavour; they help kickstart the fermentation. Salt plays a crucial role by preventing the growth of harmful microbes while allowing the beneficial, salt-tolerant bacteria to flourish.
