For the Marinade: 1 cup thick curd (Greek yoghurt) 1 tablespoon ginger-garlic paste 1 teaspoon turmeric powder 1 teaspoon red chilli powder (adjust to taste) 1 teaspoon garam masala 1 teaspoon chaat masala 2 tablespoons gram flour (besan) 1 tablespoon lemon juice Salt to taste For the Tikka: 250g paneer, cut into 1-inch cubes 1 large onion, cut into 1-inch squares 1 large capsicum (bell pepper), cut into 1-inch squares 1 tablespoon oil or cooking spray Instructions: 1. In a large bowl, whisk together all the ingredients for the marinade until smooth. 2. Gently add the paneer cubes, onion, and capsicum to the marinade. Mix until everything is well-coated. Let it marinate for at least 30 minutes, or up to a few hours in the refrigerator. 3. Preheat your air fryer to 200°C (400°F) for about 5 minutes. 4. Lightly grease the air fryer basket with oil or cooking spray. Arrange the marinated paneer and vegetables in a single layer, ensuring they are not overcrowded. 5. Air fry for 12-15 minutes, flipping halfway through, until the paneer is golden brown and slightly charred at the edges. 6. Serve hot, sprinkled with extra chaat masala and a squeeze of fresh lemon.

Ingredients: 2 cups mixed millet flakes or puffed millet 1 medium onion, finely chopped 1 medium tomato, finely chopped 1 small boiled potato, diced 1/4 cup roasted peanuts 2 tablespoons fresh coriander, chopped 1 green chilli, finely chopped (optional) 1/2 teaspoon chaat masala Salt to taste Juice of half a lemon Green chutney and tamarind chutney, to taste Instructions: 1. In a large mixing bowl, combine the puffed millet, chopped onion, tomato, and boiled potato. 2. Add the roasted peanuts for a satisfying crunch. 3. Sprinkle over the chaat masala and salt. Toss everything together gently. 4. Drizzle the green chutney and tamarind chutney over the mixture. The amount you add depends on how spicy and sweet you like your bhel. 5. Add the chopped coriander and a generous squeeze of lemon juice. 6. Give it one final, quick toss and serve immediately to ensure the bhel stays crisp and doesn't get soggy.
