of potato chips or even some bakery samosas. They are often made with refined flour (maida) and potatoes, which are high in simple carbohydrates and low in nutrients. This is where the moong dal pakoda, also known as 'moongode,' changes the game. The star ingredient isn’t potato or refined flour; it’s moong dal, or split yellow lentils. Lentils are a nutritional powerhouse, and moong dal is particularly celebrated in Ayurveda for being light and easy to digest. A single serving of these pakodas provides a significant dose of plant-based protein. To minimize oil absorption, ensure your oil is hot enough (around 180°C) before you drop the batter in; this sears the outside quickly and prevents the pakoda from becoming a greasy sponge. You can also experiment with modern cooking methods. An air fryer can produce wonderfully crisp moong dal pakodas with a fraction of the oil. Alternatively, you can make them as flat tikkis and pan-fry them with just a little ghee or mustard oil.
