More Than Just a 'Picky Eater'
For years, those who push away brussels sprouts or find grapefruit unpalatable have been labelled 'picky eaters'. However, a growing body of research, including large-scale genetic studies, confirms that the experience of taste is not universal. How you
perceive bitter foods depends heavily on your genes. Humans possess about 25 different bitter-taste receptor genes, an evolutionary hand-me-down designed to help our ancestors avoid toxins, which were often bitter. This genetic variation means two people can eat the exact same food and have a genuinely different sensory experience. What is mildly bitter to one person can be overwhelmingly unpleasant to another, proving it is less about fussiness and more about fundamental biology.
The 'Supertaster' Gene
At the heart of this research is a gene known as TAS2R38. We all inherit two copies of this gene, one from each parent, and the specific combination determines how sensitive you are to certain bitter compounds. People with two 'taster' versions of the gene (known as PAV) are often called 'supertasters' and find foods like broccoli, cabbage, and even dark chocolate exceptionally bitter. Those with two 'non-taster' versions (AVI) perceive these same foods as much milder. This single gene can have a profound impact, influencing everything from whether a child will eat their vegetables to how much an adult enjoys a pint of beer.
Beyond the Dinner Plate
The most fascinating aspect of recent research is how these genetic taste preferences correlate with factors far beyond food choices. It’s not just about liking or disliking certain vegetables. Studies involving thousands of participants, like the data analysed from the UK Biobank, have linked the TAS2R38 'supertaster' gene to a variety of other traits and health risks. For instance, people highly sensitive to bitterness may also be more sensitive to salty tastes and therefore less likely to add extra salt to their meals. Other research has drawn connections between bitter taste perception and alcohol consumption, with those who find alcohol intensely bitter being less likely to develop a dependency.
Unexpected Health Connections
The implications of our bitter-sensing abilities continue to expand. One large-scale study linked the 'supertaster' gene to surprising health outcomes, including an association with chronic kidney disease and even bipolar disorder. While researchers stress that correlation is not causation and more work is needed, these findings open new avenues for understanding the complex interplay between our genes, our sensory world, and our overall health. It suggests that the receptors that detect bitterness on our tongues are involved in far more bodily processes than just taste. It is a reminder that our bodies are deeply interconnected systems.
A Different Kind of Personality Test
Perhaps one of the most unusual findings comes from an Austrian study of nearly 1,000 people, which suggested a link between a preference for bitter tastes and certain personality traits. The research found that individuals who enjoyed bitter foods like radishes and tonic water were more likely to exhibit malevolent traits such as narcissism and everyday sadism. The authors speculated that for these individuals, eating bitter foods—which our brains are wired to perceive as potentially dangerous—could be like enjoying the thrill of a scary rollercoaster. While this is just one study, it highlights the diverse and often unexpected ways that our perception of taste is woven into our lives, influencing our diet, health, and perhaps even our behavior.
