The idea is to eat fibre-rich foods—specifically non-starchy vegetables—at the beginning of your meal, before you touch any carbohydrates or sugars. The fibre in the vegetables acts like a protective gatekeeper in your digestive system. It doesn’t get digested or broken down into sugar. Instead, it forms a viscous, gel-like mesh in your stomach and small intestine. This 'gate' physically slows down the digestion and absorption of the carbohydrates you eat afterwards.
Slowing the Release of Sugar
By eating your greens first, you create a natural buffer. When the starches and sugars from your meal eventually reach your small intestine, the fibrous gel is already there. This makes it harder for digestive enzymes to break down the carbs quickly and slows the rate at which glucose can pass into your bloodstream. Instead of a sudden, sharp spike, you get a much gentler, more gradual rise in blood sugar. Your body can then release insulin more steadily, avoiding the dramatic overcorrection that leads to a crash. Studies have shown this simple change in food order can reduce the glucose spike from a meal by up to 75 percent, an effect comparable to some diabetes medications. The ideal order is vegetables first, followed by protein and fats, and finishing with starches and sugars. Before your main course of dal, rice, or roti, start with a simple salad like a kachumber. A small bowl of vegetable soup or a side of sauteed greens like palak or beans also works perfectly. Even when eating out, you can order a side of grilled vegetables or a simple salad to have as a starter. The key is to get that dose of fibre in first to create the protective mesh. You don't have to be perfect with every meal, but consistently applying this principle can make a significant difference in how you feel.
