The primary reason many people find cold brew gentler on the stomach comes down to acidity. The brewing process directly impacts which chemical compounds are extracted from the coffee grounds. Traditional hot brewing methods, including espresso, use high
temperatures (around 90-96°C) that rapidly extract oils, acids, and other soluble materials. This efficiency is what creates the bright, sharp, and complex flavour profile many love, but it also means more acids, like chlorogenic acids, end up in your cup. These acids can stimulate gastric acid production, which may lead to discomfort, heartburn, or acid reflux symptoms for sensitive individuals. Studies suggest that cold brew can be significantly less acidic than its hot-brewed counterparts because the cold water extraction process is much more selective and slow.
How Brewing Changes Everything
The magic of cold brew is in its simple, heat-free method: steeping coarse coffee grounds in cold or room-temperature water for 12 to 24 hours. Temperature is the key variable. Cold water is a less efficient solvent than hot water, meaning it extracts compounds from the coffee bean at a much slower rate. This long, slow steep extracts fewer of the highly soluble acidic compounds that hot water pulls out almost instantly. While the pH levels of hot and cold brew from the same beans can sometimes be surprisingly similar, the overall 'titratable acidity'—the total amount of acidic substances present—is often lower in cold brew. This results in a coffee that not only tastes smoother and less bitter but also contains fewer of the specific compounds that can irritate the stomach lining.
The Espresso Factor: A Different Beast
Espresso is on the opposite end of the brewing spectrum. It's made by forcing a small amount of nearly boiling water through finely-ground coffee beans under intense pressure. This method is designed for maximum extraction in minimum time—typically under 30 seconds. The high heat and pressure are extremely effective at pulling out a wide range of compounds, which results in a concentrated shot with a bold, layered flavour and a signature crema. However, this also means it has a higher concentration of acids compared to cold brew. For someone prone to digestive issues, that intense, acidic shot can be a significant trigger for stomach discomfort.
More Than Just Acidity
While lower acidity is the star of the show, other factors also contribute to cold brew's gentle reputation. The hot-brewing process extracts certain oils and compounds that can contribute to bitterness and potentially irritate the gut. Cold brewing tends to leave more of these behind, resulting in a smoother drink. Furthermore, some research indicates that the compounds extracted during cold brewing, such as crude polysaccharides, may even help boost the digestive system's immunity and reduce gut irritation. It's not just about what's left out, but also about what is uniquely created during the slow, cold steep.
Making a Stomach-Friendly Brew at Home
Making your own cold brew concentrate at home is simple. All you need is coarsely ground coffee, water, a large jar, and a filter. A general ratio to start with is one part coffee to about eight parts water. Combine them in the jar, stir, and let it steep in the refrigerator for 12 to 24 hours. Afterwards, strain the mixture through a fine-mesh sieve, cheesecloth, or coffee filter. The resulting concentrate is strong and can be diluted with water, milk, or a milk alternative to your desired strength. By controlling the process, you can create a smooth, low-acid coffee that delivers the caffeine you want without the potential digestive upset.
