This simple process, which can be done at home with just water and a jar, fundamentally transforms the lentil. Sprouting activates enzymes within the seed, breaking down complex starches into simpler sugars and making the proteins more digestible. It also reduces anti-nutrients like phytic acid and tannins, which can interfere with your body's ability to absorb minerals. The result is a food that is not only easier on your digestive system but also more nutritionally potent than its un-sprouted counterpart. Boiled until just tender, they offer a satisfyingly chewy texture perfect for a midday snack.

Preparing this snack is surprisingly simple. To sprout your own lentils (masoor dal works wonderfully), start by rinsing them thoroughly. Soak them in a bowl of water overnight (about 8-12 hours). The next day, drain the water completely and transfer the lentils to a jar covered with a cheesecloth or a sprouting lid. Place the jar in a dim spot, away from direct sunlight. Rinse and drain the lentils two to three times a day. Within 24-48 hours, you'll see tiny white tails emerge—they're ready! To prepare the snack, take your desired portion of sprouted lentils and boil them in water for just 5-7 minutes until they are tender but still have a slight bite. Drain them well, and while they are still warm, squeeze fresh lemon juice over them. Add a pinch of black salt (kala namak) and black pepper, toss, and your healthy, energising snack is ready to enjoy.
