They are ready when they feel light and crush easily between your fingers. 2. Turn the heat to low, add the ghee or oil, and toss to coat the makhana evenly. 3. Turn off the heat. Immediately sprinkle the turmeric, chilli powder, chaat masala, and salt over the makhana. 4. Toss everything together until the makhana are well-coated. Preheat your oven to 200°C (400°F). 2. The key to crispy chickpeas is making sure they are very dry. After rinsing and draining, pat them thoroughly dry with a clean kitchen towel or paper towels. 3. In a bowl, toss the dry chickpeas with olive oil, cumin, paprika, garlic powder, salt, and pepper until they are evenly coated. 4. Spread the chickpeas in a single layer on a baking sheet lined with parchment paper. 5. Roast for 20-30 minutes, shaking the pan occasionally, until they are golden brown and crispy.
