improper cooking. For vegetables, it’s best to peel them as thinly as possible, as many nutrients are concentrated just under the skin. Whenever feasible, cooking vegetables whole or in large chunks minimizes the surface area exposed to heat and water, helping to retain these vital nutrients. Steaming is one of the best cooking methods for preserving nutrients because it is less harsh than boiling, which can cause vitamins to leach into the cooking water. If boiling is necessary, using minimal water and saving the leftover liquid for soups or gravies is a smart way to reclaim those lost nutrients.
The Rules of Safe Storage
Once cooked, food must be stored correctly to prevent nutrient degradation and the growth of harmful bacteria. Time and temperature are the two most critical factors. Hot meals should be kept above 60°C until they are served, while cold items must be refrigerated at or below 5°C. Using airtight containers is essential, as exposure to oxygen can degrade vitamins, especially fat-soluble vitamins A, D, E, and K. It is also important to label all stored food with the date to ensure it is used in a timely manner. For packed lunches from home or meals prepared in advance, rapid cooling before refrigeration is key. Leftovers should be consumed within a day or two, as nutrient content, particularly vitamin C, can decline the longer cooked food is stored and exposed to air.
Handling Reheating with Care
Reheating food can further diminish its nutritional value if not done correctly. The goal is to heat it quickly and evenly without overcooking it. Microwaving can be a nutrient-friendly method due to its short cooking times, which reduces the food's exposure to heat. However, it's important to stir the food during reheating to ensure it cooks evenly. Repeatedly heating and cooling the same meal should be avoided, as this cycle degrades nutrients and increases food safety risks. Frying, while a quick method, uses high temperatures that can destroy heat-sensitive vitamins. Gentle reheating methods that don't require high heat for extended periods are always preferable for preserving the food's integrity.
Guidance from National Bodies
In India, the Food Safety and Standards Authority of India (FSSAI) provides guidelines to ensure school meals are both safe and nutritious. The FSSAI's Eat Right School program encourages a balanced diet, emphasizing fresh, local, and seasonal produce. The regulations also aim to limit the availability of foods high in fat, salt, and sugar (HFSS) in and around school premises. Similarly, the PM POSHAN scheme sets specific nutritional norms for school meals, outlining the required calories and protein for primary and upper-primary students. These guidelines encourage states to create menus based on local dietary habits, ensuring meals are not only nutritious but also culturally acceptable and appealing to children.
What to Look For: A Parent's Checklist
Parents can play an active role in ensuring their children's meals are up to standard. Look for variety in the menu throughout the week, as this suggests a broader range of nutrients. The food should appear fresh; vegetables should have a vibrant color and a firm texture, not a dull or mushy appearance that signals overcooking or poor storage. Personal and environmental hygiene are also critical components of food safety. School canteens should be visibly clean, and staff should follow hygiene protocols like regular hand-washing and using clean utensils.
