The process is straightforward: heat oil or ghee, and sizzle whole spices like bay leaves, cardamom, and cinnamon. Fry some sliced onions until golden, add ginger-garlic paste, and then toss in your favourite monsoon vegetables — potatoes, cauliflower, carrots, and green peas are all great choices. Stir in powdered spices like turmeric, red chilli powder, and coriander powder, then add soaked basmati rice and water. Let it cook until the rice is fluffy and has absorbed all the fragrant flavours. It's a complete meal that fills the kitchen with an irresistible aroma.

Craving pasta but want that familiar Indian kick? One-pot masala pasta is the fusion dish you need in your life. It perfectly marries Italian pasta with bold Indian spices, and the best part is it all comes together in one pan, minimising cleanup. This dish is a hit with kids and adults alike, offering a creamy, spicy, and satisfying meal. Start by sautéing chopped onions, garlic, and green chillies in a wide pan. Add pureed tomatoes and a mix of Indian spice powders like turmeric, red chilli powder, and a good garam masala or even pav bhaji masala for a unique twist. Once the masala base is fragrant, add your uncooked pasta (penne or macaroni work well), vegetables like corn and capsicum, and enough hot water to cook everything through. As the pasta cooks, it absorbs the spicy sauce, resulting in a perfectly integrated and flavourful dish. A swirl of cream or a sprinkle of cheese at the end makes it extra indulgent.

For a protein-packed and hearty one-pot meal, look no further than Soya Chunks Pulao. Soya chunks, also known as Nutrela, are a fantastic source of plant-based protein and have a chewy texture that makes the dish incredibly satisfying. This pulao is a quick and flavourful option that can be made in a pressure cooker in under 30 minutes. First, rehydrate the soya chunks in hot water, then squeeze them dry. In a pressure cooker, temper whole spices in oil and sauté onions until they're golden brown. Add ginger-garlic paste, tomatoes, and your spice powders. Toss in the squeezed soya chunks and some mixed vegetables, followed by soaked rice and water.
