What Exactly is Sattu?
Sattu is a flour made from roasted Bengal gram (chana), a staple in Indian states like Bihar, Jharkhand, and Uttar Pradesh. It has been a source of nourishment for generations. The roasting process is what distinguishes it from regular gram flour, or besan.
This step not only gives sattu a unique nutty flavour but also makes it more digestible and extends its shelf life. Traditionally consumed as a cooling drink called sharbat, mixed with water and spices, sattu is now being recognised for its versatility in modern kitchens, especially as a smoothie ingredient.
A Nutritional Powerhouse
The primary claim to fame for sattu is its impressive protein content. Chickpea-based sattu contains roughly 20-26 grams of protein per 100 grams, making it one of the most significant sources of plant-based protein available. While a typical serving in a smoothie (about two to three tablespoons) provides around 6-10 grams of protein, it's a substantial and convenient boost. Beyond protein, sattu is packed with dietary fibre, which is crucial for digestive health. It also boasts a low glycaemic index, meaning it releases energy slowly and helps maintain stable blood sugar levels. Furthermore, it is a rich source of essential minerals like iron, magnesium, and potassium.

Sattu’s properties make it an ideal addition to smoothies. Because it’s pre-roasted, it requires no cooking and can be added directly to your blender.
