Recipe: Easy Roasted Ragi Chips
Forget store-bought fried chips. These baked ragi chips are incredibly simple to make and deliver a satisfying crunch. Ingredients: 1 cup ragi flour, 2 tablespoons rice flour (for crispiness), 1 tablespoon oil, ½ teaspoon salt, ½ teaspoon red chilli powder, ½ teaspoon cumin powder, and about 5-6 tablespoons of warm water. Method: 1. Preheat your oven to 180°C and line a baking tray with parchment paper. 2. In a bowl, combine the ragi flour, rice flour, salt, and all the spices. Mix them well. 3. Add the oil and rub it into the flour with your fingertips until the mixture has a crumbly, breadcrumb-like texture. 4. Gradually add warm water, one tablespoon at a time, and knead to form a firm, non-sticky dough. 5. Divide the dough in half. Place one half between two sheets of parchment paper and roll it out as thinly as possible – about 2mm thick for maximum crispiness. 6. Use a knife or pizza cutter to cut the rolled dough into your desired shape, like squares or triangles. Prick each chip with a fork to prevent it from puffing up. 7. Arrange the chips on the baking tray and bake for 15-18 minutes, or until the edges are dark and crispy. Let them cool completely on a wire rack before storing.
Recipe: Simple Roasted Jowar Puffs
Jowar puffs are a light, airy, and addictive snack. While you can buy plain puffed jowar, making them at home is straightforward, and seasoning them yourself is even easier. You can either pop whole jowar grains at home or use store-bought plain puffs for this recipe. Ingredients: 2 cups of plain puffed jowar (sorghum puffs), 1 tablespoon ghee or oil, ½ teaspoon turmeric powder, ½ teaspoon red chilli powder, ½ teaspoon chaat masala or dry mango powder, and salt to taste. Method: 1. If using store-bought puffs, start by dry roasting them in a wide pan on low-medium heat for 3-4 minutes until they become very crispy. You should be able to crush one easily between your fingers. Set them aside. 2. In the same pan, heat the ghee or oil on a low flame. 3. Add the turmeric, red chilli powder, chaat masala, and salt. Stir the spices in the hot ghee for a few seconds, ensuring they don't burn. 4. Turn off the heat and immediately add the roasted jowar puffs to the pan. Toss everything together quickly and thoroughly until all the puffs are evenly coated with the masala. 5. Spread the seasoned puffs on a plate to cool down completely. This step is crucial for them to retain their crunch.
Storing and Customising Your Snacks
The best part about these recipes is that you can make a large batch over the weekend to last you the entire work week. Once completely cooled, store the ragi chips and jowar puffs in separate airtight containers. They will stay fresh and crunchy for several days at room temperature. Don't be afraid to experiment with flavours. For the ragi chips, you can add carom seeds (ajwain) or dried herbs like oregano to the dough. For the jowar puffs, a sprinkle of black pepper, garlic powder, or even a mix of roasted peanuts and curry leaves can add an extra dimension of flavour and texture.
