Makhana, or fox nuts, are a nutritional powerhouse, making them an excellent base for a healthy bhel. Recipe: Low-Oil Makhana Bhel
This recipe is quick, customisable, and bursting with classic chaat flavours. You can prepare the chutneys and roast the makhana in advance for an even faster assembly. Ingredients: 2 cups makhana 1 medium onion, finely chopped 1 medium tomato, deseeded and finely chopped 1 small boiled potato, diced (optional) 2 tbsp green chutney (coriander-mint) 2 tbsp sweet tamarind chutney 1 tsp chaat masala Juice of half a lemon Fresh coriander and sev for garnish Instructions: 1. Dry roast the makhana in a heavy-bottomed pan on low heat for 5-7 minutes, or until they are crisp and crunchy. Let them cool completely. 2. In a large mixing bowl, combine the chopped onion, tomato, and boiled potato. 3. Add the roasted makhana to the bowl. 4. Drizzle the green chutney and sweet tamarind chutney over the mixture. 5. Sprinkle with chaat masala and squeeze the lemon juice over the top. 6. Toss everything together gently until well combined. It’s important to assemble the bhel just before serving to ensure the makhana stays crunchy. 7. Garnish with fresh coriander and a light sprinkling of sev, and serve immediately.

Paneer is a vegetarian's best friend when it comes to protein. A 100-gram serving can provide around 18 grams of protein, which is essential for muscle repair and keeping you satiated. Recipe: Baked or Air-Fried Paneer Tikka
Forget the restaurant versions swimming in oil. This baked or air-fried paneer tikka delivers that signature smoky char and flavour with minimal fat. Ingredients: 250g paneer, cut into 1-inch cubes 1 medium onion, cut into 1-inch squares 1 medium capsicum, cut into 1-inch squares For the Marinade: 1/2 cup thick curd (hung yogurt) 1 tbsp gram flour (besan) 1 tsp ginger-garlic paste 1 tsp red chilli powder 1/2 tsp garam masala 1/2 tsp turmeric powder 1 tsp kasuri methi (dried fenugreek leaves), crushed Salt to taste 1 tbsp lemon juice Instructions: 1. In a bowl, whisk together all the ingredients for the marinade until smooth. 2. Gently add the paneer, onion, and capsicum cubes to the marinade, ensuring everything is well-coated. Let it marinate for at least 30 minutes in the refrigerator. 3. If using skewers, thread the paneer and vegetables alternately. You can also cook them as individual pieces. 4. To Bake: Preheat your oven to 220°C. Arrange the skewers or pieces on a baking tray lined with parchment paper. Bake for 15-20 minutes, turning halfway through, until the edges are golden brown. For a charred effect, broil for the last 2-3 minutes. 5. To Air-Fry: Preheat your air fryer to 180°C. Arrange the skewers or pieces in the basket and air fry for 8-10 minutes, flipping once, until the outside is crisp.
