Understanding the Science of Freezer Burn
Before you can defeat the enemy, you need to understand it. Freezer burn isn’t a sign of spoilage, but rather dehydration. All food contains water, which turns into countless tiny ice crystals when frozen. In the cold, dry environment of your freezer,
a process called sublimation occurs. This is where the ice crystals turn directly into water vapour, without ever melting into a liquid. This moisture loss is what leaves food with those tough, leathery, and discoloured patches. Air acts as a pathway, allowing the moisture to escape from the food and redeposit as larger ice crystals on the food’s surface or the inside of the packaging. While still safe to eat, freezer-burned food suffers a major loss in texture and flavour.
Your First Line of Defence: The Right Materials
The battle against freezer burn starts with choosing the right armour. Not all wraps and containers are created equal. Materials must be moisture-vapour resistant to prevent air from getting in and moisture from getting out. Standard plastic wrap or sandwich bags are often too thin and permeable for long-term storage. Instead, opt for materials specifically designed for the freezer. Heavy-duty freezer bags, freezer-grade plastic wrap, freezer paper, and heavyweight aluminium foil are all excellent choices. Freezer paper is a classic for a reason; its plastic-coated side should always face the food, creating a barrier that locks moisture in. For liquids and stews, rigid plastic or freezer-safe glass containers with tight-fitting lids work wonderfully.
Mastering the Art of the Airtight Wrap
Once you have the right materials, technique is everything. The goal is to remove as much air as possible before sealing. For solid items like cuts of meat or loaves of bread, the 'drugstore wrap' is a professional technique. Place the item in the centre of your freezer paper or foil, bring the two long edges together above it, and fold them down in a series of tight one-inch folds until the wrap is snug against the food. Then, press the air out from the ends, fold them into triangles, and tape securely. For freezer bags, there's a brilliant trick called the water displacement method. Place your food in the bag and seal it almost completely, leaving a small corner open. Slowly submerge the bag in a bowl of water, and the water pressure will force the air out. Just before the opening goes underwater, seal the bag completely. You'll be left with a nearly vacuum-sealed package without the special equipment.
A Note on Cooling and Organisation
Two other simple habits can dramatically reduce freezer burn. First, always cool foods completely before freezing them. Placing hot food in the freezer can raise the ambient temperature, causing other items to partially thaw and refreeze—a key trigger for the formation of large ice crystals. Let leftovers cool in the refrigerator first. Second, keep your freezer organised and don't open the door more than necessary. Frequent temperature fluctuations accelerate sublimation. An organised freezer means you can find what you need quickly, keeping the cold air in and the warm air out.

Meats, fish, and seasonal produce that have been vacuum sealed can last many months or even longer in the freezer with minimal degradation.
