From Granular Data to Strategic Decisions
Armed with precise cost data for every recipe and its modifiers, you can engage in what is known as menu engineering. This is the process of strategically designing your menu to maximize profitability. If you discover that an extra topping is extremely popular but has a very high cost, you have several options. You could slightly increase its price to reflect its true cost, find a more affordable supplier for that ingredient, or slightly adjust the portion size of the add-on. Conversely, if you find a topping that is low-cost but highly popular, you might feature it more prominently on your menu. This data-driven approach removes guesswork and empowers you to make small tweaks that can lead to significant profit increases over time.

The point of recipe-level costing isn't just to raise prices. It's about achieving fairness and sustainability. It helps you identify 'Puzzles'—items with high profit margins but low popularity—which you can then promote more heavily. It also helps you deal with 'Plowhorses'—popular items with low margins—by finding ways to subtly reduce their cost without diminishing quality.
