Speedy Paneer Bhurji on Toast
Paneer bhurji, or scrambled Indian cottage cheese, is a protein powerhouse perfect for a quick breakfast. With around 18-20 grams of protein per 100g serving, it provides sustained energy. To make it in under 10 minutes, start with pre-crumbled paneer.
Sauté finely chopped onions, tomatoes, and green chillies for a few minutes. Add basic spices like turmeric and garam masala, then toss in the paneer and cook for just 2-3 minutes until heated through. Because paneer requires almost no cooking time, this dish comes together incredibly fast. Serve it hot on a slice of whole-wheat toast for a complete and satisfying meal that will keep you full until lunch. For an even faster process, you can chop your vegetables the night before.
Quick Moong Dal Cheela
A moong dal cheela, or savoury lentil pancake, is a classic North Indian breakfast that is both light and filling. A recent recipe shows how you can pack 32-35g of protein into a serving by adding paneer and curd. While traditional recipes require a few hours of soaking for the dal, you can soak it overnight to make your morning prep faster. In the morning, simply blend the soaked moong dal with ginger, green chilli, and a little water to form a smooth batter. Pour the batter onto a hot tawa, spread it thin like a dosa, and cook for a couple of minutes on each side until golden. To boost the protein, top with crumbled paneer, onions, and coriander before flipping. This meal is excellent for managing blood sugar and keeping you energised.
Instant Tofu Scramble (Bhurji)
For a vegan alternative to paneer, tofu bhurji offers a similar high-protein scramble. Using extra-firm tofu, which is well-drained and crumbled, you can create a breakfast in just 10 minutes. Start by sautéing onions, garlic, and tomatoes for about three to four minutes until they soften. Add spices like turmeric, cumin powder, and garam masala, then add the crumbled tofu. Cook everything together for another two minutes. The entire process is incredibly quick, making it an ideal choice for a hearty, plant-based start to the day. Serve it on its own or with toast. Some recipes suggest adding a pinch of black salt (kala namak) at the end to give it an 'eggy' flavour.
No-Cook Sattu Sharbat
When you have absolutely no time to cook, a sattu drink is the fastest high-protein option. Sattu, a flour made from roasted gram, is a traditional superfood in parts of India, valued for its cooling properties and high protein content. Simply mix a few tablespoons of sattu flour into a glass of chilled water. Add a pinch of black salt, roasted cumin powder, and a squeeze of lemon juice for a savoury, refreshing drink. This take on a classic sharbat can be made in less than three minutes and provides instant energy and satiety. It’s a perfect, gut-friendly breakfast for warm mornings or after a workout.
Protein-Boosted Besan Cheela
Similar to moong dal cheela, the besan (gram flour) version is even faster as it requires no soaking. Besan is naturally gluten-free and a good source of protein. To make the batter, simply whisk besan with water, salt, turmeric, and other spices until smooth. You can stir in finely chopped onions, tomatoes, and spinach for added nutrients and flavour. The batter is ready instantly. Pour it on a hot pan and cook for a few minutes on each side. Each cheela provides a good dose of protein, and you can enhance it further by adding grated paneer on top.
Greek Yogurt Bowl with Nuts and Seeds
A Greek yogurt bowl is arguably the simplest and most versatile no-cook breakfast. Greek yogurt contains significantly more protein than regular yogurt, keeping you fuller for longer. For a balanced breakfast, start with a cup of plain, unsweetened Greek yogurt. Top it with a handful of almonds or walnuts for healthy fats and extra protein. Add a sprinkle of chia seeds or flaxseeds for fibre and a nutritional boost. You can also add fresh fruit like berries or sliced banana. This entire breakfast can be assembled in under five minutes and customized to your liking.
