Paneer Bhurji, a savoury scramble of Indian cottage cheese, is a protein-packed way to start the day. The secret to making it in under 10 minutes lies in your prep. Instead of crumbling a block of paneer by hand, use store-bought grated paneer or give
a block a quick blitz in a food processor. This saves precious minutes. For the base, use a food chopper for your onions, tomatoes, and chillies to get them finely diced in seconds. Heat oil and butter in a pan, and add cumin seeds, letting them splutter before adding finely chopped ginger, garlic, and green chillies. Sauté for a moment, then add your chopped onions and cook until translucent, which should take about three to four minutes. Add the tomatoes along with turmeric, red chilli powder, and coriander powder. Cook for another minute until the tomatoes soften. Finally, add the crumbled paneer, salt, and a pinch of kasoori methi. Mix everything well, cook for just two more minutes, and finish with a garnish of fresh coriander. You'll have a restaurant-style bhurji ready before your toast is done.
The Instant Oats Chilla
Oats Chilla is a healthy, pancake-like dish that is both filling and nutritious. To get this on the table in 10 minutes, the key is to use quick-cooking oats or ready-made oat flour. If you only have rolled oats, a quick 30-second pulse in a grinder will turn them into flour. In a bowl, combine the oat flour with a few tablespoons of besan (gram flour) for better binding. Now, add your flavourings: finely chopped onions, tomatoes, capsicum, and grated carrots. Using a grater for veggies is much faster than chopping. Add spices like turmeric, cumin powder, and a pinch of red chilli powder. The most important hack here is to create a 'no-rest' batter. Gradually add water while whisking to form a smooth, pourable batter, similar to a dosa batter consistency. Ensure there are no lumps. Heat a non-stick tawa, lightly grease it, and pour a ladleful of the batter, spreading it gently. Cook for two to three minutes on each side until golden brown, and your instant chilla is ready to serve.
The Perfect Poha in a Pinch
Poha, or flattened rice, is a beloved breakfast across India. The biggest time-sink is often soaking the poha, but you can skip that entirely. The trick is to use medium-thick poha and rinse it correctly. Place the poha in a colander and wash it under running water for just 20-30 seconds, tossing it with your fingers. Drain it completely and let it rest for about five minutes while you prepare the tempering. This brief resting period is enough to soften the flakes perfectly without making them mushy. For the tempering, heat oil in a pan and add mustard seeds, cumin seeds, and peanuts. Once they pop, add finely chopped onions, green chillies, and curry leaves, and sauté until the onions soften. Add turmeric, then immediately add the now-fluffy poha. Fold everything together gently to avoid breaking the flakes. Cover and cook on low heat for just two minutes to allow the poha to steam and absorb the flavours. Finish with a squeeze of lemon juice and fresh coriander for a zesty, fresh breakfast that comes together in minutes.
