Sabudana Khichdi
Perhaps the most iconic fasting dish, Sabudana Khichdi is a light yet incredibly filling preparation made from soaked tapioca pearls. It is a staple in households across India during periods of vrat (fasting). The soft, pearly sabudana is typically tossed
with roasted peanuts, boiled potatoes, fresh coriander, and a simple tempering of cumin seeds and green chillies in ghee. The peanuts provide a delightful crunch and a dose of protein, while the potatoes make it a satisfying meal. A final squeeze of lemon juice brightens the flavours, making it a comforting dish that provides a quick burst of energy to those observing fasts.
Kuttu ki Puri
When wheat flour is off the menu, buckwheat flour, or kuttu ka atta, comes to the rescue. Kuttu ki Puri is a deep-fried, gluten-free bread that is a beloved part of the Sawan thali. The flour is often kneaded with mashed boiled potatoes and seasoned with sendha namak (rock salt) and black pepper before being rolled out and fried until crisp and puffed. These puris have a distinct nutty flavour and a slightly dense, satisfying texture. They are most commonly paired with a simple potato curry, creating a wholesome and flavourful meal that feels festive and complete.
Makhana Kheer
No festive period is complete without a dessert, and Makhana Kheer is a perfect choice during Sawan. Made from phool makhana (fox nuts or lotus seeds), this creamy pudding is both nutritious and delicious. The fox nuts are lightly roasted in ghee until crisp, then simmered in milk until the mixture thickens. Flavoured with cardamom, saffron, and sweetened to taste, it’s a guilt-free dessert rich in calcium and protein. Garnished with slivered almonds and pistachios, this kheer offers a delightful texture and a comforting warmth, making it a perfect end to a fasting day meal.
Singhare ka Halwa
Another popular sweet treat during fasting is Singhare ka Halwa, made from water chestnut flour (singhare ka atta). This rich and dense pudding is prepared by roasting the flour in a generous amount of ghee until it turns aromatic and golden brown. Sugar and water are then added, and the mixture is cooked until it thickens into a glossy, smooth halwa. It’s often studded with chopped nuts like almonds and cashews. This halwa is known for providing sustained energy, making it an excellent food for those undertaking long fasts. Its earthy flavour and melt-in-the-mouth texture are truly comforting.
Vrat Wale Aloo
Potatoes are a versatile and essential ingredient in the Sawan kitchen. Vrat Wale Aloo is a simple, quick, and flavourful potato curry made without onion or garlic. Boiled potatoes are cubed and lightly sautéed in ghee with cumin seeds, green chillies, and sometimes chopped ginger. Seasoned only with rock salt and black pepper, the dish is often finished with a sprinkle of roasted cumin powder and fresh coriander. It can be prepared as a dry sabzi or with a light tomato or yoghurt-based gravy (dahi aloo). This dish serves as the perfect accompaniment to Kuttu ki Puri or Samak rice.
Samak Ke Chawal
Samak ke chawal, or barnyard millet, is the go-to grain substitute during religious fasts. Despite its name, it is not a true rice but a type of millet that is light on the stomach and easy to digest. It can be prepared in various ways, most popularly as a simple khichdi or pulao. Cooked with mild spices, peanuts, and vrat-friendly vegetables like potatoes and bottle gourd, it makes for a comforting and nutritious meal. It has a slightly chewy texture and a neutral taste that absorbs flavours well, making it a wonderfully versatile base for any fasting meal.
Fruit Chaat
Simple, refreshing, and requiring no cooking, a bowl of fresh Fruit Chaat is a popular choice during Sawan. A mix of seasonal fruits like apples, bananas, pomegranates, and papaya are chopped and tossed together. The dressing is minimal, typically consisting of a sprinkle of rock salt, black pepper powder, and a squeeze of lemon juice to enhance the natural sweetness of the fruits. This dish is not only hydrating but also packed with essential vitamins and fibre, providing a natural energy boost and keeping you refreshed throughout the day.
