The Golden Rules of Fast Pasta

1. One-Pot Creamy Tomato and Spinach
This is a weeknight saviour that uses pantry staples. Start by sautéing chopped onion and garlic in a large pot. Add a can of crushed tomatoes, vegetable broth, and your pasta of choice. Bring it to a simmer and let the pasta cook directly in the sauce, stirring occasionally. The magic happens as the pasta releases starches, creating a creamy texture without any cream. In the last few minutes of cooking, toss in a few large handfuls of fresh spinach and stir until wilted. Finish with a sprinkle of Parmesan for a complete meal in about 25 minutes.
