onions, and tomatoes are essential. To hit the 10-minute mark, chop your vegetables the night before. You can use either homemade or store-bought paneer. If using a block, crumbling it is quick work. For a dry version, simply sauté and serve. For a slightly gravy-style bhurji, a splash of water or milk towards the end creates a richer texture.Ingredients:- 1 cup crumbled paneer- 1 small onion, finely chopped- 1 small tomato, finely chopped- 1 green chilli, chopped- 1/2 teaspoon cumin seeds- 1/4 teaspoon turmeric powder- 1/2 teaspoon red chilli powder (optional)- Salt to taste- 1 tablespoon oil or ghee- Fresh coriander for garnishMethod:Heat oil in a pan and add cumin seeds. Once they sizzle, add the chopped onion and green chilli, sautéing for about two to three minutes until the onion softens. Add the tomatoes and cook for another minute. Stir in the turmeric, red chilli powder, and salt. Finally, add the crumbled paneer, mix well, and cook for two to three minutes until heated through. Garnish with fresh coriander and serve hot with toast or roti.
2. Instant Oats Chilla
A chilla is a savoury pancake, and this version using oats is both incredibly healthy and fast. Using quick-cooking oats is the secret here, as they soften almost instantly. To make the batter, you can grind oats into a fine powder or, for an even faster method, use them whole if they are the quick-cooking variety. Mixing them with besan (gram flour) provides a better structure and taste. The batter requires a brief resting period, but you can use that time to heat your pan and gather your spices.Ingredients:- 1/2 cup quick-cooking oats- 1/4 cup besan (gram flour)- 1/4 cup finely chopped vegetables (onion, capsicum, carrot)- 1/2 inch ginger, grated- 1/4 teaspoon turmeric powder- Salt to taste- Water to make the batter- Oil for cookingMethod:In a mixing bowl, combine the oats, besan, chopped vegetables, ginger, turmeric, and salt. Gradually add water while whisking to form a smooth, flowing batter, similar to a pancake batter but not too thin. Let it rest for 2-3 minutes. Heat a non-stick tawa or pan on medium heat and lightly grease it with oil. Pour a ladleful of the batter and spread it gently into a circle. Drizzle a little oil around the edges and cook for about a minute or two until the underside is golden. Flip and cook the other side for another minute. Serve immediately with chutney or yoghurt.

Poha, made from flattened rice, is the quintessential quick Indian breakfast. It’s light, satisfying, and absorbs flavours beautifully. The most crucial step for perfect, fluffy poha is in the prep: rinse the poha in a colander under running water for just a minute. Do not soak it, as that will make it mushy. Let it sit and drain while you prepare the tempering (tadka). Using finely chopped onions and pre-shelled peanuts saves valuable time.Ingredients:- 1.5 cups thick poha- 1 small onion, finely chopped- 1/4 cup peanuts- 1 teaspoon mustard seeds- A few curry leaves- 1/2 teaspoon turmeric powder- 1 teaspoon sugar- 1 tablespoon lemon juice- Salt to taste- 2 tablespoons oil- Sev and fresh coriander for garnishMethod:Place the poha in a strainer and rinse it with water, then set it aside to drain completely. Heat oil in a pan, add mustard seeds, and let them splutter. Add the peanuts and curry leaves, sautéing for a minute. Add the chopped onion and cook until translucent. Stir in the turmeric powder. Add the drained poha, salt, and sugar, and mix gently until everything is well combined. Cover and cook on low heat for 2 minutes. Turn off the heat, add the lemon juice, and fluff with a fork. Garnish with coriander and a generous sprinkle of sev before serving.
