season. It’s a complete meal that’s deeply woven into the fabric of Indian cuisine, celebrated for its simplicity, versatility, and profound health benefits. Moong dal is the lightest and most easily digestible of all lentils, providing ample protein without straining your gut. How to Make Simple Monsoon Khichdi
Making a basic, healthy Khichdi is incredibly simple. You will need ½ cup of rice and ½ cup of yellow moong dal, washed and soaked together for 30 minutes. In a pressure cooker, heat a tablespoon of ghee. Add a teaspoon of cumin seeds, a pinch of asafoetida, and ½ teaspoon of grated ginger. Sauté for a minute before adding ¼ teaspoon of turmeric powder. Next, add the drained rice and dal mixture, along with 3-4 cups of water and salt to taste. You can also add chopped vegetables at this stage. Close the lid and pressure cook for 4-5 whistles on medium heat. Let the pressure release naturally. The result should be a soft, porridge-like consistency. Serve hot with another dollop of ghee, a side of plain curd, or a piece of pickle for a truly satisfying monsoon meal.
