However, a 9-inch round cake pan has over 25% more volume than an 8-inch one. Pouring a recipe designed for the larger pan into the smaller one is a recipe for an overflow in the oven. Conversely, spreading a batter too thinly in a pan that's too large will cause it to bake too quickly, resulting in a dry, thin final product. In the age of online food blogs and endless digital content, anyone can publish a recipe. But publishing comes with a responsibility to the reader who is investing their time, money, and effort. When a recipe developer claims a recipe is “tested,” it should mean that all significant variables have been controlled and noted, including the cooking vessel. Vague instructions like “bake in a medium dish” are a disservice. It’s the equivalent of a science experiment that omits the size of the beaker. Great recipe writers and reputable culinary sources understand this. They provide precise measurements for their pans—not just “a 9-inch pan,” but a “9x2-inch round metal cake pan”—because they know it makes the difference between a recipe that works and one that frustrates. They are guiding the home cook to replicate their success, not just providing a loose set of guidelines.
What You Can Do as a Home Cook
Until all recipes meet this standard, what’s a home cook to do? First, be a critical consumer of recipes. Favour sources known for their meticulous testing. Second, invest in a few standard pan sizes: a 9x13-inch rectangular pan, an 8-inch or 9-inch square pan, two 9-inch round cake pans, and a 9x5-inch loaf pan will cover most of your baking needs. If a recipe is vague, check the comments section. Often, other users will have documented their struggles and successes with different pan sizes. And if you must substitute, remember the general rules: a smaller, deeper pan will require a longer bake time (and possibly a lower temperature), while a larger, shallower pan will cook much faster. Don't be afraid to trust your instincts and check for doneness early and often.
