Crafting the Base
To begin crafting this cooling dish, the first step involves preparing the poha, or flattened rice. Take one cup of poha and place it in a colander. Gently rinse it under cold running water for just a few seconds. It's crucial not to over-wash it; a quick rinse is sufficient to clean it and allow it to absorb moisture. Immediately after rinsing, let the poha drain thoroughly in the colander for approximately 15 minutes. This ensures that any excess water is removed, leaving the poha perfectly hydrated and separated. Following this, transfer the drained poha to a mixing bowl. Add half a cup of yogurt (curd) and a quarter cup of milk to the poha. Mix these ingredients gently until well combined, then allow the mixture to rest for about 5 to 7 minutes.
