What truly sets her ice cream apart is the unwavering commitment to purity; each and every flavor is entirely free from artificial colors, flavors, and preservatives. Four Simple Ingredients
The magic behind Niruben’s ice cream lies in her incredibly minimalist yet effective ingredient list. She relies on just four fundamental components: fresh, high-quality milk, rich cream, natural stevia as a sweetener, and a selection of ripe fruits or crunchy dry fruits for flavor. This deliberate choice to exclude artificial additives ensures that the true essence of each ingredient shines through. Beginning her journey in January 1986 from a humble corner of her home, Niruben initially used a simple gas stove to bring her frozen creations to life. Over the years, this small-scale operation gracefully evolved into a dedicated workspace, complete with a traditional furnace and a specially designated area for ice cream preparation, all while maintaining the core philosophy of using only natural elements.
Traditional Craftsmanship
Amrit Bhai, a devoted employee who has been a part of Niruben’s journey for nearly thirty years, provides a window into the meticulous, time-honored process. Unlike the large, automated machinery prevalent in commercial ice cream production, Niruben’s team adheres to a more artisanal method. They utilize a massive, traditional 'kadhai' (a large Indian wok) placed over a substantial furnace to expertly boil the milk, which forms the foundational element for every batch. The fresh milk and cream are sourced daily from a nearby local dairy, ensuring peak freshness and quality. Batches of ice cream are prepared every few days, a practice designed to preserve the exquisite taste and texture. This dedication to traditional techniques, from sourcing to preparation, has cultivated a loyal customer base that appreciates the authentic, handcrafted nature of Niruben’s frozen delights.
Expanding Flavors, Enduring Quality
The ice cream shop that started with a modest selection of flavors like rose coconut, variyali, chocolate, badam pista kesar, and kesar elaichi has blossomed into an impressive establishment offering approximately 27 distinct varieties. While Niruben’s advancing age occasionally presents challenges in sourcing certain ingredients, leading to the temporary discontinuation of a few beloved flavors, the commitment to quality and taste remains uncompromised. The shop not only serves a steady stream of walk-in customers eager for their favorite frozen treats but also efficiently caters to bulk and takeaway orders, demonstrating the enduring popularity and widespread appeal of her unique, preservative-free ice creams.
