• 1 cup tender coconut flesh (malai), chopped
• 1 cup tender coconut water
• 1 cup fresh cream (or coconut cream for vegan version)
• ½ cup condensed milk (or ¼ cup sugar + ¼ cup coconut milk for vegan version)
• ½ teaspoon vanilla extract (optional)
• A pinch of salt (enhances flavour)

How to make:

1. Scoop out the tender coconut flesh and roughly chop it. Keep some pieces aside to add later for texture.
2. In a blender, add tender coconut water, the chopped coconut flesh, condensed milk, and vanilla extract.
3. Blend until smooth and silky.
4. Whip fresh cream (or coconut cream) lightly until soft peaks form.
5. Fold the blended coconut mixture into the whipped cream.
6. Fold in the coconut chunks you saved earlier.
