Soak 2 cups of roasted makhana, 10 cashews, 10 almonds, 5 dates and a few saffron strands in 1½ cups of warm milk, then blend until smooth. Bring the mixture to a gentle boil, allow it to cool completely, and fold in chopped apples, bananas and pomegranate seeds. Chill before serving for the best flavour.
Sabudana fruit cream
Give traditional sabudana a fruity twist. Soak ½ cup sabudana and cook it gently in milk until the pearls turn soft and translucent. Stir in a smooth paste made from soaked makhana and mixed dry fruits to make the mixture richer. Once cooled, add grapes, diced mango and pomegranate seeds for a dessert that is creamy and naturally sweet.
Sweet potato and apple rabri
Grated sweet potato makes this rabri hearty while keeping it suitable for fasting. Cook it slowly with full-fat milk until thick and creamy.
