Whether it’s tailgating or homegating, fans of the Buffalo Bills are known to be elite tier when it comes to food. Wingin’ It returns for it’s eighth season of Mad Hatter-esque recipes, taking inspiration from the Buffalo Bills and their opponents.
Buffalo pesto with angel hair
As a long-haired, somewhat awkward looking man who has been described as “lanky” here and there in my life, it’s hard for me to dislike Jacksonville Jaguars’ quarterback Trevor Lawrence. I’m a fan enough of his hair to make part of this pairing a tribute
to that tangential connection between us, but not enough to root for Lawrence or the Jaguars. So the angel hair is smothered by the Buffalo pesto. It’s always better when Buffalo comes out on top.
Buffalo Pesto
Serves: 4-6
Active Time: 5 min
Total Time: About 10 min
Ingredients
1 tsp butter
1/2 cup pine nuts
2/3 cup olive oil
2 cups fresh basil, lightly packed
4 cloves garlic
2 Tbsp hot sauce (see below)
1/3 cup Parmesan/Romano blend
1 lb angel hair pasta, prepared to package directions
2/3 cup water reserved after cooking pasta
You will need: Saute pan, food processor
- Preheat pan to MED and melt butter in pan.
- Stir in pine nuts and gently roast for about 3 min, stirring frequently.
- Remove from heat and allow to cool for about 5 min.
- Add pine nuts, olive oil, basil, garlic, and hot sauce to food process; pulse until smooth, but short of liquefied.
- Add cheese blend and pulse in to stir; season with salt.
- Toss pasta with pesto and starch water.
- Mangia!
Wingin’ It Tips
There really isn’t too much for tips here. On the hot sauce, I recommend using something with more kick to it. I used one of my favorite Melinda’s brand weaponized hot sauces. As for justifying this section at all this week, you might have noticed this was out a bit later than usual. It was a heck of a week that pushed things back for me, but focusing on the positive aspects of how busy it was, you can see a leftover cupcake from my daughter’s birthday as an after-pasta treat.
