Whey protein isolate goes through more processing to remove most of the fat and lactose, resulting in a product that is 90% or more protein. This refinement makes it lighter, more soluble, and easier to mix, often with a cleaner taste. Hydrolyzed protein is even further broken down, making it the fastest to absorb but it can sometimes have a bitter taste that needs to be masked.
