The small chain restaurant Guaca Go is hitting its stride after starting out as a roadside stand in Key Largo in 2017. From that stand it morphed into a catering company before going full brick and mortar in 2020.
Now, the fast-casual, healthy food destination known for their bowls, wraps and burritos has locations in Delray Beach, West Palm Beach, Tequesta and is opening another in Royal Palm Beach. The restaurants are built around the concept that guacamole should be made fresh daily and served as the star of the meal.
The Royal Palm Beach restaurant is locally owned and operated by Fab Nunez and Jessie Sequeira, the same franchise owners behind Guaca Go in Tequesta, which opened earlier this year. The Royal Palm spot is their second Guaca Go restaurant.
"Royal Palm Beach is the next step for us and we could not be more excited," they said in a written statement.
Though fresh made guacamole is at the heart of the restaurant, a recent stop in Royal Palm Beach took it one step further: made fresh to order. Both the OG Burrito and the Mediterranean bowl we ordered featured guacamole that was made the moment we ordered and was amazing.
The OG Burrito is a delicious beast. Yes, a beast. Massive. Featuring yellow rice, chopped Romaine lettuce, black beans, elote corn, salsa, guacamole, a cilantro lime sauce and a choice of protein (marinated chicken, hot honey chicken, braised pork carnitas or sirloin steak) it's seriously good tasting and a crazy good, bang-for-the-buck deal too. This burrito could make two meals for many people. And unlike many big burritos, the tortilla held up and didn't blow out.
The Mediterranean bowl is no small thing either. It comes with yellow rice, chopped Romaine lettuce, guacamole, cucumber salad, chickpeas, pickled onion, creamy garlic sauce and a choice of protein. You can see (it's made right in front of you) a lot of care that goes into it and the presentation is practically art. It has great flavor with wonderful brightness from the cucumber salad and pickled red onion. Again, this easily could be split or make two meals for one person.


Guaca Go grand opening deals Sept. 16-18
The restaurant is already open, but will host three days of grand opening events beginning on Wednesday, Sept. 16 with a ribbon cutting and $5 bowls from noon to 3 p.m. On Thursday, Sept. 17 $1 from every bowl, burrito or salad will be donated to Roots and Wings, a local nonprofit that provides free literacy instruction to over 1,600 students in 24 Title I elementary schools throughout Palm Beach County. Finally, on Friday, Sept. 18, all first responders, nurses, teachers and students receive 50% off in-store all day.
Guaca Go was founded by married entrepreneurs Carson and Amber Bennett, who launched the brand as a roadside guacamole stand in the Florida Keys before growing it into a Palm Beach County favorite.
"Watching Fab and Jessie bring Guaca Go to Tequesta and now to Royal Palm Beach has been incredibly rewarding," said co-founder Carson Bennett. "They understood our vision from day one, and this second location is proof of what happens when the right partners believe in what you're building."
