Copper Blues, the beloved outpost at CityPlacethat sadly fell victim to the wrecking ball in 2023, is back and better than ever at The Mall at Wellington Green.
Like a mighty Phoenix rising from the ashes, this juggernaut of fantastic food, good times and great music will celebrate its grand opening on Friday, Oct. 16 and Saturday, Oct. 17.
Copper Blues was wildly popular at CityPlace and the perfect jumping off spot to catch a performance at the Palm Beach Improv or see a movie at the AMC Theater before being cut down in its prime. They specialized in expertly executed comfort/pub fare, creative beverages and a non-stop flow of live music.
The new location on the mall's second level will once again combine the energy of a live music venue with
a lively restaurant and bar atmosphere in the heart of Wellington. The spacious venue will feature two bars, a stage, and both indoor and outdoor seating with space for up to 275 guests.
“We’re excited to bring the Copper Blues experience to Wellington and introduce our proven combination of great food, live music and entertainment to a growing audience in the community,” said Robby Day, partner and co-founder of Copper Blues. “We look forward to becoming a place where people can come together for a night out, whether they’re joining us for dinner, drinks, live music or a show next door.”
Though as a brand Copper Blues has evolved some over the past three years, Day was adamant that the general core is still the same. "We're about live music and the experience."
If you're wondering if the restaurant's evolution also includes the menu ... it does. For fans of the original, however, there's no need to fear.

Day said that all the big hits are still available. He said that Copper Blues' focus is still doing elevated/comfort bar food with great execution and added "We definitely kept the main big sellers and are highlighting some new items with the new location."
One of those new menu items is their citrus-marinated, dry-rubbed rotisserie chicken. Day is a huge fan of the dish and said "it's delicious, that's my go to every day."
Day was at the CityPlace location during its decade-long run and has been working at their next closest location in Miami in the interim.
"Our old location, we were in good standings with the landlord. It was a successful business. It's just that the landlord wanted to tear down the building and develop something else." "We immediately started looking and took us a little bit to find a location that kind of fit."

Day said that for the first month they are planning on having live music on Wednesday through Saturdays and then slowly adding more nights.
Also, like the previous location, the Palm Beach Improv will once again be right next door.
"It's been great to come into this market and then hear the response and how excited people are, how many people remember Copper, how many people remember a food item or a drink item ... we're really excited to open up Wellington."
