While researching a story on Greater Cincinnati's best tacos recently, I discovered something unexpected: my new favorite chicken quesadilla. It was served at Taqueria Los Cunados, a taco truck parked beside the BP station in Oakley. And while their tacos are fantastic (and made my list of the best), it's the quesadilla I can't stop thinking about.
Quesadillas have always been near and dear to me. I first fell in love with them at a very non-authentic sports bar near my apartment in Brooklyn. But the ones I found at Los Cunados are a zillion times better.

While quesadillas at other taquerias can feel like afterthoughts, Los Cunados goes all out, marinating the chicken in a mixture of apple cider vinegar, pineapple, peppers, cloves and other spices.
They're served fresh from the griddle, with three cheeses – pepper jack, Colby and a spicy Chihuahua – melted and melded into the chicken.
Co-owner Humberto Hernandez told me the recipe was developed by his wife and urged me to come back to try his own favorite version of the quesadilla: this one made with both chicken and steak. I guarantee I'll be right there.
