Inspector Notes: Observed chlorine sanitizer reading 0 ppm at the dish machine in the main kitchen. Observed multiple food items (gator balls, raw chicken tenders, precooked wings) inside reach in unit adjacent to fryer to cold hold above 41F (see temperature log). Observed the ambient temperature inside the unit holding at 58F. Observed build up of food debris inside the crevices of the prep top unit located in the main kitchen. Observed multiple fruit flies around dish machine area and at server station.

Inspector Notes: Ensure hand wash sink free of debris. A handwashing facility may not be used for purposes other than handwashing. Observed pineapple stored next to raw seafood in bottom of prep-top cooler. Observed ceviche (raw seafood) stored next to cooked birria in reach-in cooler. Observed raw chicken stored next to raw beef and raw pork in bottom of reach-in cooler. Observed containers of raw pork and cheese stored uncovered in bottom of prep-top cooler.

Inspector Notes: Observed produced (peppers, onions) and shrimp stored below cut various meats (chicken, beef, pork) in the main kitchen's low-boy cooler. Observed food items in the low-boy coolers (raw beef, chicken, and chorizo) and coolers. Observed condiment bottles are stored in the prep-top cooler without a label. Observed food pans stacked on the drying rack while wet. Observed clean bowls and plates stored above the main kitchen steam table are stored upright and uncovered. Observed faucet at the kitchen 3-compartment sink leaking and the second faucet in the bar 4-compartment sink not operating.
