A new restaurant franchise specializing in customizable teriyaki bowls has confirmed when it will join Lubbock.
Teriyaki Madness, a Seattle-style teriyaki franchise that started in 2003, confirmed through email that it will open in Lubbock in the spring of 2027.
What is Teriyaki Madness
Teriyaki Madness originated after the founders couldn't find Seattle-style teriyaki in their hometown after college. It started franchising in 2005, and was acquired by owner Michael Haith in 2016, who then moved the headquarters to Denver.

"(People should expect) fresh, made-to-order bowls of hot, healthy (or not -we don’t judge) protein-packed food that’ll satisfy your cravings," the company stated in an emailed communications. "Plus, addictive sauces made with the best ingredients. What
sets Teriyaki Madness apart is its combination of authentic Seattle-style teriyaki, bold flavors and a highly customizable menu that gives guests control over their meal."

The brand's menu consists of nine bowls, four appetizers, five sides and seven sauces. The bowls have grilled proteins, including chicken, steak, salmon, and tofu, that can reach up to one pound in the double protein option. Fresh vegetables, rice, noodles and sauces allow for further customization in these made-to-order bowls.
"Our fan favorite is definitely the Spicy Chicken Teriyaki, but if you’re not into a mouth kick, the regular Chicken Teriyaki is also a homerun," the company said. "The brand also brings an energetic, irreverent personality to the category, pairing quality food with a playful identity that makes teriyaki feel approachable, craveable and anything but ordinary."
The franchise did not confirm an address for its new Lubbock location, but did state that each restaurant creates 25 jobs. Teriyaki Madness is expanding, and directed people to visit teriyakimadness.com as more locations are announced. The company also told people to join the Mad Rewards program to be the first to know about special offers.
