Studio 54 co-founder and hotelier Ian Schrager will bring his sleek hotel brand, Public, to West Hollywood this summer — and with it, three new dining destinations built in collaboration with a superstar lineup of restaurant veterans.
Schrager developed the hotel’s dining options alongside Shelley Armistead, former CEO and partner of Gjelina Group, and Nicky Pickup, former head of Gjusta Bakery. Former Pijja Palace head chef Miles Shorey and former director of operations for the Gjelina Group, Lucy Cogswell-Stewart, will join the operating team; Jess Arndt will lead the beverage program. Public West Hollywood is slated to open July 2026; this will be the second outpost for the Public Hotel brand, which first opened on New York’s Lower East Side
in 2017.
Public West Hollywood features three on-site food choices: Louis, an all-day bakery, cafe, and diner; a day-to-night Pool Bar; and the Pool Deck, which focuses on daytime snacks. Expect a menu that leans into California coastal dining across all three venues. The airy Louis will offer laminated pastries; bagels; a smoked salmon plate; tomato confit and burrata baguette sandwiches; a seasonal fruit plate; and a grain bowl topped with avocado, soft-boiled eggs, and chile crunch.
At the sleek Pool Bar, find options like summer-ready crudo, anchovy-Parmesan dip, a Comté-and-caramelized-onion-topped burger, and sundaes made with gelato or sorbet. The open-air Pool Deck will serve meze, salads, sandwiches, and frozen desserts. Public Brew from Counter Culture, Kettl matcha, cold-pressed juices, cocktails, and wine will also be available at the property.
Public takes over the former home of the Standard in the heart of the Sunset Strip, which closed in 2021 after more than two decades. The 137-key property will feature an interior designed by Schrager and British architect John Pawson, plus a 16,000 square-foot rooftop.
