What's Happening?
KPAT Hotels has appointed Marky Godbeer as the head chef for Sully’s Rooftop at the Avani Mooloolaba Beach Hotel, which is set to open in May 2026. Godbeer, who has extensive experience in both international and Australian hospitality, will oversee the culinary
direction of the restaurant. His background includes training in a Michelin-starred restaurant in England and serving as Executive Chef at Brisbane’s Calile Hotel. Sully’s Rooftop aims to offer modern Australian dining with a focus on seasonal ingredients and locally sourced seafood. The hotel, developed by KPAT Hotels under a franchise agreement with Minor Hotels, represents a significant investment in the Sunshine Coast’s tourism infrastructure.
Why It's Important?
The appointment of Marky Godbeer is a strategic move by KPAT Hotels to position Sully’s Rooftop as a premier dining destination on the Sunshine Coast. This development is significant as it marks the first full-service internationally branded hotel to open in the region in over four decades, potentially boosting local tourism and hospitality sectors. The focus on seasonal and locally sourced ingredients aligns with current trends in sustainable and destination-driven dining, which could attract both tourists and locals, enhancing the region's culinary reputation.
What's Next?
With the opening scheduled for May 2026, Sully’s Rooftop is expected to quickly establish itself as a standout venue in the local dining scene. The appointment of Iain Guthrie as Venue Manager, who brings experience from Merivale’s Establishment Precinct, further strengthens the team. The hotel’s opening is anticipated to increase accommodation supply and attract more visitors to the Sunshine Coast, potentially leading to economic growth in the area.
