Chana Koenig, a former New York City pastry chef, has established a unique chocolate boutique in Israel, named Cacao HaGalil, which specializes in goat milk-based chocolates. This initiative was inspired by her lactose-intolerant nephew, as goat milk is often
easier to digest for those with dairy sensitivities. Koenig, who moved to Israel in 2019, opened her shop in 2023 at Kibbutz Evron. Her chocolates, which include vegan and parve options, are certified kosher by the Nahariya Rabbinate. The boutique has become known for its dark chocolate with sea salt, and Koenig also conducts workshops in English and Hebrew, teaching participants to make various chocolate treats.
