Artisan has confirmed that it will proceed with the publication of The Noma Guide to Building Flavour, the latest cookbook by René Redzepi, despite recent abuse allegations against the chef. Scheduled for release on April 21, this book is the final installment
in a three-book deal with Redzepi, which began in 2017. The deal, reportedly worth seven figures, includes previous titles such as Foundations of Flavor: The Noma Guide to Fermentation and Noma 2.0: Vegetable, Forest, Ocean. The New York Times recently reported allegations of physical and psychological abuse by Redzepi, based on accounts from former employees at Noma, the world-renowned restaurant in Copenhagen.
