Natalie Chiu and her husband Charlie have launched Saicho, a sparkling tea business, inspired by Chiu's personal experience with alcohol intolerance. The idea was born after Chiu felt excluded during wine pairings at fine-dining restaurants due to her inability
to consume alcohol. With a background in flavor chemistry, Chiu moved to the UK to study food science and later pursued a Ph.D. in flavor chemistry. The couple began developing drink concepts while Chiu was finishing her studies, eventually winning an entrepreneurial competition at the University of Nottingham. They invested their savings and competition winnings into the business, which started trading in 2019. Saicho has grown from a two-person operation to a team of 24 employees, with their products now available in Michelin-starred restaurants.
