The research involved comparing mangoes stored at 12°C with those stored at 30°C over 24 days, revealing that the cooler storage maintained color, firmness, and acidity better. The study also found that mangoes stored at 12°C retained more antioxidants and had less cellular damage, suggesting that this temperature is ideal for preserving mango quality during transportation.
