Anthony Calvo, a second-semester student, is using the program to shape his vision of opening a restaurant that blends his Mexican, Salvadorian, and Asian influences. Under the guidance of instructor Malik Francis, the curriculum emphasizes not only cooking techniques but also leadership and personal growth.
