What's Happening?
Ayoh has reformulated its mayonnaise products, switching from a high-oleic sunflower oil base to an avocado oil base. This change aims to provide a creamier texture and a more neutral flavor profile. The new mayonnaise line includes varieties such as original
mayo, dill pickle mayo, hot giardinayo, tangy dijonayo, and miso mayo. According to Molly Baz, founder of Ayoh, the decision to switch to avocado oil was driven by its superior texture and flavor during testing.
Why It's Important?
The reformulation of Ayoh's mayonnaise line highlights a shift in consumer preferences towards healthier and more natural ingredients. Avocado oil is perceived as a healthier alternative due to its beneficial fats and neutral taste, aligning with the growing demand for clean-label products. This move could set a precedent for other condiment manufacturers to explore similar ingredient changes, potentially influencing the broader market. Companies that innovate with healthier ingredients may gain a competitive edge in attracting health-conscious consumers.
