A Life Pivoted
Pallavi Kumar Aggarwal, later known as Meera, once navigated a vibrant life filled with fashion design, modeling, and a demanding corporate career as a vice
president. Her routine included marathon running and a disciplined fitness regimen, leading her to believe her diet, rich in non-vegetarian fare, was optimal for her body. This seemingly stable existence was drastically interrupted when a severe knee injury, specifically to her patella, left her struggling to walk. Medical professionals offered a grim outlook, unanimously stating she would likely never regain full mobility, a diagnosis that deeply contrasted with her active lifestyle. This profound setback initiated a period of intense personal research and a significant shift in her life's direction.
Dietary Revelation
After exhausting conventional medical treatments and spending considerable sums without improvement, Meera took her health into her own hands. Inspired by documentaries and the resilience of female athletes who had recovered from severe injuries, she began exploring alternative approaches. A pivotal moment was discovering the benefits of a plant-based diet, influenced by content that challenged her previous nutritional beliefs. She embraced traditional Indian staples, incorporating ingredients like ragi, coconut, various millets, and dals into her daily meals. Meera found transitioning to a vegan lifestyle in India surprisingly straightforward, given the inherently plant-forward nature of many Indian dishes, with the primary change being the exclusion of meat and dairy. This dietary shift was instrumental in her physical recovery.
Culinary Innovation
Meera's journey also involved a deep dive into culinary experimentation. She began crafting her own plant-based beverages, such as ragi milk and coconut buttermilk, which became popular among her friends and family for their health benefits, including positive impacts on blood work and heart health. She also integrated nutrient-dense foods like haleem laddoos, nuts, and seeds into her diet. A significant challenge was her longing for bakery treats, a comfort she was reluctant to give up. This led her to experiment with vegan baking, substituting traditional ingredients like milk and butter with nut butters, cold-pressed oils, and plant-based milks. What started as a personal endeavor to recreate her favorite cookies and cakes evolved into a business, 'Idunn,' as others recognized the nourishing quality of her creations.
Ayurveda and Lifestyle
Meera's approach to health is deeply influenced by Ayurvedic principles, which guide her food choices and preparation. While Ayurveda doesn't condemn sugar outright, it stresses mindful consumption, emphasizing the right timing and moderation. Her daily diet consists of regular Indian meals, but prepared with Ayurvedic considerations; for instance, adding ingredients like sonth (dried ginger) and heeng (asafoetida) to chana dal for improved digestion. She prioritizes seasonal foods and continues to make her own vegan milks and incorporate millets into her regular meals. This holistic approach not only aided her recovery but also empowered her to reclaim her active life. She not only completed the challenging Ladakh Marathon but also achieved ambitious mountaineering feats, including trekking to Everest Base Camp and summiting Mt. Yunam and Friendship Peak, defying the initial medical prognosis.
Nourishing Creations
Meera's bakery, Idunn, represents a fusion of her personal health journey and her passion for food. Despite not being a formally trained chef, she focuses on using the freshest, highest-quality ingredients, which she believes contributes to the nourishing properties of her baked goods. Her philosophy extends beyond mere commerce; Idunn aims to cultivate a community centered around conscious eating, a connection to nature, and mindful choices. She exemplifies a life of balance, integrating her work in design and baking with practices that nourish her mind and body, such as yoga and strength training. This deliberate shift after 18 years in corporate life has allowed her to build a more intentional and fulfilling existence, proving that personal well-being can be intricately linked with the food we consume and the lifestyle we cultivate.
