Former actress and content creator Sameera Reddy is sharing her fitness journey, and a recent highlight is her creation of a healthier chocolate brownie.
This modified recipe incorporates lauki, also known as bottle gourd, to create a dessert that is both rich and satisfying without the usual guilt. Reddy shared the detailed recipe on Instagram, describing these brownies as "rich, chocolatey, and surprisingly nourishing," emphasizing that they offer a feel-good experience post-consumption. The recipe aims to cater to those seeking healthier dessert options without compromising on taste or texture, making it an appealing choice for individuals focused on their well-being and dietary choices.
Crafting the Guilt-Free Treat
The process of making these special brownies begins with preparing the lauki. It's grated and then lightly squeezed to remove excess moisture, ensuring it remains soft and pliable. To this foundation, powdered jaggery is added for sweetness, alongside peanut butter for richness, milk, and a hint of vanilla extract, all blended into a smooth mixture. The dry components are then combined separately. This includes either maida or oat flour, unsweetened cocoa powder for that deep chocolate flavor, baking soda and baking powder for leavening, and a pinch of salt to enhance the taste. These dry ingredients are thoroughly mixed into the wet batter, and finally, chocolate chips are folded in. The batter is then poured into a prepared baking tray and baked at 180 degrees Celsius for approximately 25 to 30 minutes, until a toothpick inserted comes out clean. A crucial final step involves letting the brownies cool slightly before cutting them into portions.

Aditi Prasad Apte, a Senior Clinical Nutritionist, explains that lauki is naturally rich in water content, making it an exceptional ingredient for imparting moisture to items like brownies. Its nearly 90% water composition aids in achieving a soft, fudgy texture. While lauki excels at adding moisture, Apte clarifies that it's not a complete replacement for fats like butter or oil, which contribute essential richness and mouthfeel. Instead, it functions best as a partial substitute, effectively reducing the overall fat content while still preserving a desirable texture. This makes it a valuable addition for creating lighter baked treats.

The inclusion of lauki significantly enhances the nutritional value of traditional brownies. According to nutrition experts, it boosts the fiber content and lowers the overall calorie density of the dessert. Furthermore, lauki introduces beneficial micronutrients, such as potassium and antioxidants, contributing to a more balanced dessert profile.
