Crispy Bread Base
Begin by preparing the foundation of your Mango Shahi Tukda: perfectly fried bread. Take large white bread slices and trim their edges, opting for a triangular
or square shape as preferred. Heat a generous amount of ghee in a frying pan and carefully shallow-fry each bread piece until it achieves a beautiful light golden-brown hue on both sides. Once fried to crisp perfection, use a strainer to remove the bread slices. Immediately, and this is crucial for texture, submerge the hot fried bread into a prepared milk mixture. Allow these slices to soak for a good 20 to 25 minutes, absorbing the liquid and becoming tender while retaining a slight bite. This soaking period is key to melding the flavors and textures for the final dessert.
Luscious Mango Rabri
The heart of this summer delight is the vibrant mango rabri. Start by peeling and cubing three medium-sized mangoes. In a mixing bowl, combine these mango cubes with milk powder, a pinch of saffron strands for aroma and color, and a quarter cup of sugar. Gently mix these ingredients. Transfer this mango mixture along with half a cup of milk into a cooking pot. Cook this mixture for about a minute on medium heat. Now, add another half cup of milk and continue to cook for two more minutes. Incorporate half a teaspoon of baking soda and cook for an additional two to three minutes, allowing the rabri to thicken slightly and develop its creamy consistency. Finish by stirring in two crushed cardamoms for that classic Indian dessert fragrance. Remove from heat and let it cool down completely before assembling.
Assembling the Masterpiece
The final stage is assembling your exquisite Mango Shahi Tukda. Before serving, you have the option to chill it in the refrigerator for a refreshing experience or serve it immediately. Select a serving platter and carefully arrange the soaked bread slices. It's important to gently squeeze out any excess milk from the bread slices without causing them to break apart, ensuring they hold their shape. Once the bread base is laid out, generously pour the prepared mango rabri over the soaked slices, ensuring each piece is well-coated. For the final touch, garnish the dessert with small cubes of fresh, ripe mango and a few mint leaves, if desired, for a hint of freshness. This combination of textures and flavors creates a truly unforgettable summer dessert.
