Spice Up Your Khichdi
The heart of this vibrant khichdi lies in its aromatic tempering, or 'tadka'. Chef Kunal's recipe involves heating ghee and sautéing a medley of spices and aromatics. This includes dry red chillies for a touch of heat, asafoetida (heeng) for its unique flavour, mustard seeds and cumin seeds that pop and release their essence, and a sprig of fresh curry leaves. Finely chopped onions, ginger, garlic, and green chillies are then added, cooking until the onions turn golden and translucent, infusing the ghee with their fragrant oils. Finally, chopped tomatoes are introduced, along with turmeric powder, chilli powder, and salt, cooked down until softened. This flavourful base is then combined with the pressure-cooked millets and lentils to create the signature masala khichdi.
Cooking The Khichdi
Preparing Chef Kunal's millet masala khichdi is an efficient process, ideally suited for a pressure cooker, serving approximately four to six individuals. The initial step involves thoroughly washing the four types of millets—foxtail, kodo, barnyard, and little millet—until the water runs clear. These washed millets are then transferred into the pressure cooker. Following this, a blend of washed lentils, including moong dhuli dal, masoor dal, and toor dal, is added to the cooker. Seasonings of turmeric and salt are incorporated, and the cooker is sealed for pressure cooking. While the millets and lentils cook, the flavourful tempering is prepared separately. Once the pressure cooking is complete, the sautéed tempering is carefully mixed into the khichdi, creating a harmonious fusion of taste and texture. The dish is best enjoyed hot, garnished generously with fresh coriander leaves and fried onions for an added layer of flavour and visual appeal.
