Crafting the Filling
Embark on creating the heart of your Kathi Roll: a vibrant aloo gobi filling. Begin by heating two tablespoons of oil in a pan over medium heat, then introduce
finely chopped onions, sautéing them until they reach a beautiful golden-brown hue. Next, add one tablespoon of ginger-garlic paste, stirring for about a minute until its aromatic essence is released. Incorporate two finely chopped tomatoes and cook until they soften, forming a rich base. Now, it's time for the spices: add one teaspoon each of turmeric powder, cumin powder, and coriander powder, along with half a teaspoon of red chili powder and a quarter teaspoon of garam masala. Stir these spices into the mixture and cook for another minute to allow their flavours to meld. Introduce two cups of peeled and cubed potatoes and one cup of cauliflower florets to the pan. Stir periodically, adding a little more water if the mixture becomes too dry. For a desirable, thicker consistency, gently mash some of the potatoes and cauliflower directly in the pan. Assembling the Rolls

This step is crucial to ensure they are pliable and won't crack when rolled. Lay each warmed paratha or roti flat. Spoon a generous portion of the flavourful aloo gobi filling onto the center of each wrap, ensuring an even distribution. Then, carefully and tightly roll up the paratha or roti, tucking in the sides as you go to create a neat, compact kathi roll. This rolling technique helps to keep the filling contained and makes the roll easy to handle and eat.
