Sweet Potato Prep
The foundation of this dish starts with sweet potatoes. Begin by thoroughly washing and scrubbing the sweet potatoes to remove any dirt or residue. Next,
slice the sweet potatoes into even rounds, approximately 1/4 inch thick. This ensures uniform cooking and a pleasing presentation when the stacks are assembled. It's important to aim for consistency in the size of the slices, as this will affect how quickly they cook. Set the oven to the required temperature and begin to prepare the baking sheet with parchment paper.
Seasoning & Roasting
Once the sweet potato slices are ready, it's time to infuse them with flavor. Drizzle the slices generously with olive oil, ensuring each piece is coated. Sprinkle the potatoes with a blend of your favorite spices – salt, pepper, and possibly a hint of chili powder for an added warmth. Arrange the seasoned sweet potato slices on a baking sheet lined with parchment paper, making sure they are not overcrowded to allow for even roasting. Place the baking sheet in the preheated oven and let the sweet potatoes roast until they're tender and slightly caramelized.
Chipotle Sauce Magic
While the sweet potatoes are roasting, prepare the flavorful chipotle sauce. This sauce adds a vibrant kick that perfectly complements the sweetness of the sweet potatoes. Combine the chipotle peppers in adobo sauce, along with some lime juice, a touch of honey or maple syrup for sweetness, and a pinch of salt. Blend the ingredients in a food processor or blender until smooth and creamy. Adjust the amount of chipotle peppers according to your spice preference; for a milder sauce, use fewer peppers. Once blended, taste and adjust seasoning as needed, adding more lime juice for tang or a bit more sweetener if desired.
Stacking & Serving
When the sweet potatoes are cooked to perfection, take them out of the oven. Allow them to cool slightly before assembling the stacks. To build the stacks, start with a sweet potato slice as the base, top it with a dollop of the chipotle sauce, and repeat layers. The number of layers can vary depending on your preference and the size of the sweet potato slices. Once the stacks are assembled, arrange them attractively on a plate or serving platter. Garnish with fresh cilantro, a sprinkle of sea salt, or a drizzle of extra chipotle sauce for added visual appeal.
