The Dough Foundation
Begin by gathering your essential dry ingredients in a bowl: a portion of refined flour, a teaspoon of instant dried yeast to help it rise, a pinch of sugar
to feed the yeast, and half a teaspoon of salt for flavor. Add a tablespoon of oil for richness. Gradually incorporate about 130 milliliters of water while mixing and kneading until you achieve a soft, pliable dough. Once the dough comes together, cover it with a damp muslin cloth and let it rest and rise in a warm place for approximately one hour until it has visibly increased in size. This resting period is crucial for developing the dough's texture and allowing the yeast to work its magic, creating that signature airy quality in the final bread.
Shaping and Resting
After the initial rise, lightly dust your work surface with some refined flour to prevent sticking. Transfer the dough onto this floured area and gently roll it into a log shape. From this log, divide the dough into 16 equal portions. Shape each portion into a smooth ball. Dust the work surface again with flour and then take each dough ball and roll it out into an oval shape, aiming for a consistent thickness. Once shaped, cover these flattened dough discs once more with a moist muslin cloth and allow them to rest for an additional 15 minutes. This second rest helps the dough relax, making it easier to puff up during cooking.
Air Frying for Puff
Preheat your air fryer to a temperature of 200°C for at least five minutes. This initial heating ensures the air fryer is hot enough to rapidly cook and puff the pita bread. Carefully arrange a few of the prepared pita discs into the air fryer basket, ensuring they don't overlap too much. Once the basket is filled, fit it securely back into the air fryer. Cook for approximately five minutes. During this short cooking time, the high heat and circulating air will cause the pita bread to puff up dramatically, forming the characteristic hollow pocket inside. Keep a close eye to prevent overcooking.
Serving and Enjoyment
Once the pita bread has puffed and turned a light golden brown, carefully remove the basket from the air fryer. Allow the freshly baked pita bread to cool slightly on a wire rack or a clean platter. Pita bread is best enjoyed warm, as this is when its texture is most soft and pliable. Arrange the cooled pita breads on a serving platter. They are perfect for scooping up delicious dips like hummus or tzatziki, or they can be used as a base for sandwiches and wraps. Fill them with your favorite meats, falafel, or a medley of fresh vegetables for a complete meal.
