Crafting the foundation for your Khaman Dhokla begins with a meticulously prepared batter. The core ingredient is gram flour (besan), known for its slightly
nutty flavor and texture. To enhance the crumb and prevent sogginess, a small amount of fine semolina (rava/sooji) is often incorporated. The flavor profile is built with a paste of fresh ginger and green chilies, providing a gentle warmth and aroma. A touch of sugar balances the tanginess of lemon juice or white vinegar, which acts as an acid to react with leavening agents. Essential spices like turmeric powder contribute to the characteristic yellow hue, and salt ensures the overall taste is well-rounded. Steaming and Cooling Dhokla

After a brief cooling period, the steamed cake is then carefully cut into uniform squares or diamond shapes, preparing it for the flavorful tempering.
Crafting the Tempering
The tempering, or 'tadka', is the vibrant finishing touch that elevates Khaman Dhokla from good to exceptional, infusing it with a burst of aromatic flavors. This process begins by heating a small quantity of oil in a pan over medium heat. Once the oil is warm, mustard seeds are added, and they are allowed to splutter vigorously, releasing their pungent aroma. This is followed by optional but recommended sesame seeds, which add a subtle nutty crunch. Next, slit green chilies are introduced, contributing a mild heat and visual appeal. A pinch of asafoetida (hing) is crucial for its distinctive savory note, and a handful of fresh curry leaves are added, which crackle and release their fragrant oils into the tempering. To create a slightly sweet and tangy dressing, water, a touch of sugar, and a squeeze of lemon juice are mixed in. This mixture is brought to a quick boil to allow the flavors to meld. The hot tempering is then generously poured evenly over the steamed and cut dhokla pieces, ensuring each bite is infused with this delicious dressing.

The final presentation of Khaman Dhokla is as important as its preparation, offering a delightful visual and gustatory experience. After the flavorful tempering has been poured over the cut squares, the dhokla is ready for its final adornments. The most common and visually appealing garnish is finely chopped fresh coriander leaves, which add a burst of freshness and a vibrant green contrast to the yellow cake.
